The key to a fine gin lies in its balance. The spirit must be strong enough, but never harsh or fiery, the aromas must be evident but elegant, and the botanicals (the natural ingredients whose essential oils add the character) must chime in together, with juniper providing the lead note.

I’ve learned this from many years of reviewing gins from around the world for the Telegraph, and from interviewing master distillers such as Cosmo Caddy, the founder of Devon Distillery on the beautiful Dartington Estate just outside Totnes.

Caddy also has a popular gin school on the site and his Still on the Move, a mobile gin still on the top of a fabulous 1973 VW pick-up truck called Ginny, travels around the UK making bespoke gins on the spot for weddings and other events. If you were at the Telegraph Gin Experience at London’s Hurlingham Club in 2019, you might remember Ginny in action in the grounds making a Summery gin especially for the occasion!
